The responsibilities of the Registered Dietitian include, but are not limited to:
Responsibilities:
- Responsibility for the operation of the food service program.
- Assist with maintaining written dietary policies and procedures.
- Interpret the department’s policies and procedures to employees, residents, visitors, government agencies, etc.
- Assist with planning the dietary services portion of the resident’s discharge plan.
- Participate in facility surveys (inspections) made by authorized government agencies.
- Interview residents or family members, as necessary, to obtain diet history. Involve the resident/family in planning dietary objectives and goals for the resident.
- Participate in maintaining records of the resident’s food likes and dislikes.
- Assist in developing methods for determining quality and quantity of food served.
- Ensure that charted dietary progress notes are informative and descriptive of the services provided and of the resident’s response to the service.
- Visit residents periodically to evaluate the quality of meals served, likes and dislikes, etc.
- Assist in developing specific diet plans for individual residents.
- Review therapeutic and regular diet plans and menus to assure they are in compliance with physician orders and limited to the facility-approved list of diets.
- Ensure that residents are offered a nourishing bedtime snack by reviewing the nourishment program periodically.
- Monitor monthly and weekly weights.
- Monitor weight variances (1, 3, and 6 months) on a monthly basis.
- Assess and plan interventions for pressure sores and review monthly.
- Follow tube feeding-dependent residents monthly.
- Provide in-services to dietary and nursing staff on therapeutic diets, as needed.
- Provide nutrition education to residents, as needed, regarding therapeutic diets and drug-nutrient interactions (e.g., Coumadin and Vitamin K).
- Review, approve, and sign menus.
- Complete monthly safety and sanitation reports.
- Perform other duties as deemed necessary and appropriate, or as directed by the Administrator.
Education & Experience:
- Current registration with the Credentialing Branch of the American Dietetic Association (CDR).
- Must possess, at minimum, a Bachelor’s Degree in Dietetics from an accredited college or university.
- Must have, at minimum, three (3) years of experience in a supervisory capacity in a hospital, skilled nursing care facility, or other related medical facility.
- Must have training in cost control, food management, diet therapy, etc.
- Board Certified Specialist in Gerontological Nutrition.
